SMOTHERED BEEF-As with all braised dishes, this one may also be done in a casserole. (350 F.).
Ingredients:
3 lbs rump
2 Tbsp. mild prepared mustard
Flour mixed with salt and pepper
1 tsp. celery seed
3 large onions, sliced
1 cup strained tomatoes or 1/2 can tomato soup
3 Tbsps. fat
Method:
Dredge the meat with flour and brown it in a heavy pan. Brown the onions in the fat; add mustard, celery seed, and tomatoes. Pour over meat and simmer 3 hours. Serves 6.
