The French
artichoke is boiled in salted water, served hot with brown butter or
Hollandaise sauce, or cold with mayonnaise. The spiny choke below the leaves
and above the heart must be discarded. The Jerusalem artichoke is washed,
pared, boiled like a potato and dressed with seasoning, melted butter and
minced parsley.
