Sweet Potato Puff


Sweet Potato Puff

2 cups mashed sweet potato   
Salt and pepper
2 Tbsps. fat                                     
¼ cup milk or cream
1 egg
To the mashed sweet potatoes ass the melted fat, seasonings and milk. Beat the egg-yolk and white separately, add the yolk to the potato mixture, and then fold in the white. Put into a baking dish or individual moulds, set in a pan containing hot water and bake (375 F.) until puffy and brown.
