Real-not Frozen Custard-3-Ingredient ICE CREAMS; and an Ice-Cream float.


Coffee Ice Cream: All you need to make this for yourself are:
-3 Tbsp instant coffee (and a couple of Tbsp of water)
-1/2 can of condensed milk
-2 1/2 cups whipping cream
Beat until whipped, pour into a freezer safe container, then freezer for 3-6 hours. When it’s ready to come out of the freezer, use an ice cream scoop to spoon that creamy goodness into your favourite dessert bowl. Enjoy.
The second recipe comes from my Cook Book; and; while it has very little to do with actual survival; from my Survival blog.
Here’s what you need:
-8-12 cups fresh, clean snow
-1 tsp vanilla
-10 oz. sweetened, condensed milk
-what ever flavour you might wish to add.
And here’s what you do:
1.      Scoop your fresh, clean snow into a large bowl.
2.      Sprinkle vanilla, and then drizzle condensed milk all over as well. Fold all ingredients together and stir until they’re well-combined.
3.      If necessary, fold more snow in until you've achieved your desired consistency.
4.      Scoop into a bowl and enjoy!
5.    Store remaining (if any) snow ice cream in a freezer-proof container with a lid.

Then you’re definitely going to want to check out this home made Italian cream float recipe They look and are absolutely delicious. The recipe only requires 4 or 5 ingredients. If you plopped these in front of your family for dessert, I'm guessing you’d be the hero of the day.
Here’s what you need to make one glass:
-1/2 cup Club Soda
-3 Tbsp fruit flavoured syrup
-1Tbsp half & half (coffee cream)
-3 ice cubes-standard size
-whipped cream/maraschino cherry, to top it off
Here’s what you do:
Add your ice cubes to the glass. Then pour club soda into the glass. Pour in 3 tbsp of your desired flavour combination of fruit syrup  into the soda. Just before you serve, pour the half & half into the soda mixture. This way, the cream with seep down and create a cool design as it falls. Serve will whipped cream and a cherry on top. Buns, Rolls, Fancy Yeast Breads




          Soft, Light Dough- A softer dough is used for rolls than for loaves of bread, and rolls and fancy breads should be permitted to become lighter than loaves. This is because they are eaten fresh and should be very light and spongy in texture.
            For Plain Rolls, use the instant method. This saves time and they are just as good.
          For Fancy Rolls when large quantities of fat, sugar and eggs are used, the best results are obtained by making a sponge of the yeast, liquid and one-half the flour, then adding the fat, sugar and eggs after the sponge is light. However, very good results can be secured by adding all ingredients before the first rising.
          Baking Rolls- Bake in hot oven (425 F.). Rolls are so small in size that slow baking dries them out. For crusty rolls, place 1/2 to 1 inch apart in baking pan. To obtain a soft, bright rust colour, grease the rolls before baking; for a crisp crust, do not grease either before or after baking.

Recipes
         
          *  Standard Roll
           1 pkg.fast acting yeast
           2 1/4 cups hot water
           1/2 cup skim milk powder                             
           4 Tbsps.salt
           4 Tbsps. sugar
            6 cups flour (enough to make a tender dough)
             4 Tbsps. shortening
            If a greater amount of sugar is used the rolls will be sweeter. If a greater amount of shortening is used, the rolls will be richer and tenderer. Not less than 2 or more than 8 Tbsp. of sugar or shortening should be used, however.
          Follow general directions for the instant method of making bread; kneading in a little less flour and permitting the dough to become lighter during each rising process, both after it is shaped and before the rolls are placed in the oven.
          Plain Rolls- When the dough is light, cut or tear it into pieces about the size of a small egg or a walnutFold sides under until top of roll is perfectly smooth. Brush top with fat. Place in a greased bread pan, on baking sheet or in individual molds. When light, bake in hot oven (425 F.) 15 to 20 minutes. Makes about 30.
          **Variations
          Bowknots-- Twist strips of dough lightly and tie in a bowknot. Bring the ends down and press to the pan.
          Braids-- Braid 3 narrow strips of dough; press ends to pan. Let rise and bake as for plain rolls
          Butterfly-- Roll out dough, brush with melted butter and roll up like a jelly roll. Cut into 1-1/2-inch slices and place on greased baking sheet 1 inch apart. Flatten across center with handle of spoon. Let rise and bake as for plain rolls.
          Butter-Leaf Rolls--Roll dough as thin as possible; brush with melted butter. Cut into strips 1-1/2 inches wide and place strips in piles of 6. Cut into 1-inch slices and place in greased muffin pans with longer cut edge down. Let rise until light, then bake in hot oven (425 F.) about 20 minutes.
          Cinnamon Rolls--When dough is light, roll 1/4 inch thick, brush with melted butter and sprinkle with brown sugar and cinnamon.  Roll like a jelly roll and slice with very sharp knife. Place on greased baking sheet 1 inch apart. When light bake in hot oven (425) about 20 minutes
          Clover-Leaf Rolls-- When dough is light, break off pieces about the size of marbles, brush with melted butter and place 3 or 4 together in greased muffin pans. When very light, bake in hot oven (425 F.) about 15 minutes. The success of these rolls depends on having the 3 or 4 balls together equal only as much dough as would be used in ordinary roll and letting them rise until very light before baking them.
          Crescent Rolls-- When dough is light, roll out and cut into triangles. Brush with melted butter. Roll each triangle loosely, beginning at the base. Place on greased baking sheet with point underneath, curving ends toward each other and press to pan. Let rise and bake as for plain rolls. When nearly done, brush with DORURE and return to oven to brown.
          Dinner Rolls-- Add 2 egg whites after adding half the flour. Add remaining flour, knead and let rise. Shape into small balls the size of a walnut and place on greased baking sheet 1 inch apart. Let rise, glaze with egg white mixed with a little water and bake as for plain rolls.
 English Muffins (An original method) -- Make very soft dough. Knead lightly, let rise, punch down and let rise again. Roll out 1/4 inch thick, on lightly floured board. Cut into large circles and let rise until light. Bake on ungreased griddle, turning when one side is brown. When second side is brown, reduce heat and bake more slowly. Baking may be finished in oven. .Cool the muffins, pull them apart with the tines of a fork, and toast them.
            * A variation of this recipe may be made by adding only enough flour to make a drop batter. Let rise until light. Drop batter into large, greased English muffin rings, arranged on greased baking sheet. Bake in hot oven (425 F.) until nearly done. Turn rings upside down and complete baking.
          Crumpets --another slight variation-use drop batter as above. Put muffin rings on a hot griddle, and bake the crumpets slowly until are well risen and lightly browned on the under side. Turn, rings and all, and brown the other side. Crumpets must be watched carefully. If they brown too quickly, lower the heat. To serve, split and toast the crumpets and butter them generously.
          Finger Rolls--Follow standard roll recipe. When light cut and shape into long pieces about the size and shape of a finger. Place on well greased pan and brush with melted fat or dorure.
          Luncheon Rolls-- Follow standard roll recipe using 6 to 8 tablespoons of shortening. Add 2 well-beaten eggs. Knead. When light shape into small biscuits. Place 1 inch apart in well greased pan. When doubled in bulk, brush with dorure and bake in hot oven (425 F.).
          Parker House Rolls (Pocket-Book) -- Follow standard roll recipe. Four tablespoons each of sugar and shortening give excellent results. When light roll dough 1/4 inch thick. Cut with biscuit cutter, brush each circle with melted butter or margarine and crease through center of each roll with dull edge of knife. Fold each roll over double. Sweet Dough- Basic Recipe-Chelsea/Cinnamon Buns


Sweet Dough- Basic Recipe--If desired, whole wheat flour can be substituted for up to one-half the quantity of flour.
        1 cup hot(not boiling) water    
        5 tsp. (2 envelopes,) fast acting granular yeast
         1/2 cup skim milk powder
         1 cup sugar                            
              Rind of lemon
          2/3 cup shortening
   1/2 Tbsp. salt  
            2 eggs
    8 cups flour
Use instant method and treat as any other dough. Bake at 400 F. for 15-20 minutes.
          **Variations
            The following recipes require 1/3 recipe each, so all three can be made from 1 recipe of risen Sweet Dough.
          Tutti Frutti Bread
          1/3 recipe risen Sweet Dough
          1 cup chopped glazed or dried fruits and nuts
          1. Roll dough into a rectangle 12x 16 inches.
2.  Turn dough over so smooth side is down; sprinkle with a mixture of fruits and nuts.
3. Punch down the dough, shape it into 2 loaves in greased bread pans. Cover the pans with a dry towel and let the loaves rise in a warm place until double in bulk, about 1 hour.
 4. Bake the loaves in a hot oven (400 F.) for 15 minutes. Reduce the temperature to moderate (350 F) and bake the loaves for 35 to 40 minutes longer or until they test done.
         
 Chelsea Buns-- Many people substitute this recipe for Cinnamon Buns; others, including some professional bakers, don't know the difference.
                             1/3 recipe risen Sweet dough
                             1/3 cup soft butter or margarine
                             1 cup brown sugar
                             1/2 tsp.cinnamon
                             2 Tbsps.corn syrup.
            1. Combine soft fat, sugar and cinnamon; spread 1/3 of this mixture in a square cake pan with capacity of 6 cups. Sprinkle with syrup.
            2. Roll dough into a rectangle 12x 16 inches.
  3. Turn dough over so that smooth side is down; spread with remaining fat-sugar mixture and roll tightly starting at the long side of the rectangle.
4. With cut edge of the roll down, slice 12 equal pieces and place cut side down in prepared pan.
5. Let rise in a warm place until doubled in bulk, about 1 hour. When dough is almost risen, preheat oven to 375 F.
            6. Bake for 30 minutes; while hot turn out of the pan.
          **Variation
            Arrange chopped or halved nuts face-down on the mixture in the pan.
            Sprinkle raisins or glazed fruit on dough before rolling.
*Current Cheese Buns-Substitute the following mixture for the fat-sugar mixture and use for filling only:
                                    8 oz. cream cheese, softened
                             1/2 cup currants
          Bake rolls on a greased cake pan or cookie sheet. Cool and glaze buns with icing made from:
                             1 tsp. lemon juice
                             1 cup icing sugar         
           Swedish Tea Ring
                             1/3 recipe risen Sweet Dough
                                    fruits, nuts, glaze
1. Follow directions for Chelsea Buns to end of step 3; spread filling almost to edge and sprinkle with glazed fruits or nuts.
2. Join the ends of the roll and pinch together; place the ring on a greased baking sheet.
3. Use a very sharp knife, to cut into the ring from top, outer edge, but not through to inner edge at intervals of 2 inches.
4. Separate and twist each section slightly-overlapping so that a spiral effect can be seen; cover loosely with waxed paper and let rise in warm place until doubled in bulk.
5. Bake ring in 375 F oven until golden brown, about 25-30 minutes; when almost cool glaze with syrup or vanilla glaze and garnish with red and green cherries and nuts.
 Spicy Sweet Dough-Basic Recipe--Using ingredients for Sweet Dough substitute for sugar:
                   1 cup molasses
                         add to the dry ingredients
            1-1/2 Tbsp.cinnamon
                   1 tsp. ginger
                   3/4 tsp.each of cloves, allspice
            Prepare as Sweet Dough. If a small quantity of spicy dough is desired, about 1/3 of the quantity of spice can simply be kneaded into 1/3 of the prepared sweet dough.
          **Variation
          Raisin Bread--Prepare as Tutti Fruiti Bread using 1/3 of the recipe risen Spicy Sweet dough. add bout 1 cup raisins.
          Hot Cross Buns--Using Spicy Sweet Dough, roll out, cut and shape dough as for dinner rolls. Cover and let rise until doubled in bulk. Using sharp knife cut a shallow cross in top of each bun. Brush with slightly-beaten egg white and bake for about 20 minutes at 400 F. If desired, cuts may be filled with thin icing after buns are baked and cooled.

Doughnuts


           Doughnuts
 Although this rfirst ecipe calls for the traditional method of dissolving yeast, rapid rising yeast and the Instant Method work just as well and save time.
                                    1 tsp. sugar
                             1/2 cup warm water
                             2 tsp. (1 envelope) granular yeast
                             1/2 cup milk
                             1/4 cup shortening
                             1 Tbsp. salt
                             1/2 cup sugar
                              2 eggs
                             1/4 tsp. Nutmeg
                             1 tsp. grated lemon rind
                   3-4 cups  flour
                         Fat for frying
1. Combine the ingredients as for basic rolls using enough flour to form soft dough.
            2. Cover; let rise in a warm place until doubled in bulk.
            3. Roll dough to a thickness of a little less than 1/3 in.
            4. Cut with a doughnut cutter with a diameter of 3 inches.
5. Place on a floured cookie sheet and let rise in a warm place until doubled in bulk, about 30-45 minutes
            6. Heat fat to 365 F.
7.  Drop the dough raised side down into hot fat; fry until brown; turn and brown on other side.
8. Drain; shake in bag with sugar, icing sugar or use one of the other popular variations.
             Yield 24 doughnuts. See quick breads for doughnuts prepared with baking powder.
**Variation
          Filled Doughnuts--Cut dough into circles using a cookie cutter. Divide into 2 groups. Using egg white, brush surface near edge of one group of circles; in the center of each, place jam, jelly, whipped topping or pudding.

            Top with remaining circles, pinching edges together firmly to seal. Arrange on a floured cookie sheet; let rise in a warm place until doubled in bulk Fry.

Yeast Raised, Bread Doughnuts # 2
Ingredients:
1-1/8 cups whole milk (warm)
1/4 cup sugar
2-1/4 tsps. active dry yeast (instant)
2 whole large eggs (beaten)
1-1/4 sticks unsalted butter (melted)
4 cups all-purpose flour
1/4 tsp. salt
Any quality shortening, for frying. Shortening gives a better texture and may be a healthier choice than granola oil (which because if it is left to evaporate in say a sauce will turn to a varnish like substance, I never use). Actually for both flavour AND health, olive oil or beef tallow are probably the  best choices; but because people now worry  so much about cholesterol  nowadays, beef  tallow is now hard to get.

Glaze
3 cups powdered sugar
1/2 tsp. salt
1/2 tsp. vanilla
1/2 cup cold water (milk)

Yeast Raised Bread Doughnuts Recipe # 3

Serves:  2 dozen doughnuts
Prep Time:  2 Hrs. 45 mins.
Cook Time: 30 mins.
Ingredients:

1/2 cup warm (not hot) water
2 pkgs. active dry yeast (if cake yeast (2) are used, water should be lukewarm)
3/4 cup lukewarm milk
1/4 cup sugar
1 tsp. salt
4 to 4-1/2 cups sifted all-purpose flour
1/3 cup shortening
2 eggs

GLAZE
1-2 Tbsps. warm water (I fund, thicker is better)
1/2 tsp. vanilla
1 cup sifted confectioners' sugar

Directions, Both Recipes
1 If using CAKE YEAST, SOAK yeast in 1/2 cup warm (not hot) water- 5 minutes.
TIP: Throw about 1 tsp. sugar in with this to kick it in the butt to get it going. This is called proofing the yeast.
2 SCALD the milk.
3 POUR milk over sugar and salt in a bowl. Stir until dissolved. Make sure this mixture is only warm - not too hot t(which will either kill the yeast or scramble the eggs, or both, before you proceed.
4 ADD 1 cup of flour to eggs and yeast mixture. Beat until smooth.
5 Then ADD remaining flour to make a soft dough. When dough leaves sides of bowl, turn out onto lightly floured board.
Recipe calls for 4-4 1/2 cups flour approximately. However, every time I make it, it only takes me about 4 cups to achieve the right consistency.
6 KNEAD until dough becomes smooth and elastic. Place in lightly greased bowl. Grease top of dough and cover with waxed paper. Allow to rise in warm place (80-85°) until doubled (11/2 hours).
7 ROLL OUT dough to 1/2 inch thickness and cut-with a #2 can that has bee opened on both ends, and a doughnut cutter. If using the can, use a pill bottle to make the centre hole. Remove centres. 
8 LET RISE on the board until very light (40-60 minutes).
9 DROP, the rounds into deep hot fat, (325° - 350°) and turn when doughnuts are just barely brown. Turn once again, when browned sufficiently. Do not over brown. You will kill the rise of the yeast and the doughnuts will absorb more oil and not have as good a flavour. This is very important.
10 DRAIN on paper towel. While still warm, glaze with glaze above or dust each doughnut with granulated or confectioners' sugar.

 NOTE: None of my recipes are recommended for use with self-rising flour.

 Sweet Milk--        
3 eggs                              
1 cup sugar                                                          
2 Tbsp. shortening                   
3 tsp. baking powder                      
1 tsp. salt                               
1/2 tsp nutmeg                                  
3 1/2 cups  flour                             
1 cup milk                              
1/2 tsp. lemon extract                        
 1. Beat eggs until very light, beat in sugar, then melted shortening
2. Sift baking powder, salt and nutmeg with 1 cup flour and stir into first mixture alternately with milk.
  3. Add lemon extract and just enough flour to make a very soft dough. A soft dough makes light tender doughnuts when cooked.
 4. Chill. Roll out 3/4 inch thick. Cut with doughnut cutter.
5. Fry in deep fat (360-370 F.) and drain on unglazed paper. Makes 2 dozen.
         
Testing Fat for Frying
 Unless you wish to make a real mess of your kitchen, fats should never be brought to the smoking point as a test of heat. Use a thermometer; or use the "Camp Method"--drop into the fat a one-inch cube of bread from the soft part of the loaf. Judge the heat of the fat by the length of time it takes the bread to brown.
1. If the fat is the right temperature for smaller pieces of uncooked food-breaded chops etc. - 380-390 F. it will take 20 seconds for the bread to brown.
2. If the fat is the right temperature for larger pieces of uncooked food, or uncooked food in batter, or doughs-350-365F. The bread will brown in 40 seconds.
3. If the fat is the right temperature for most cooked foods-croquettes, fish balls etc., 365-380 F. the bread will brown in 40 seconds.
Have the Right Temperature in Frying
If fat is too hot, it scorches the food, does not cook it thoroughly, spoils the fat, or worse, smokes up and possibly sets fire to the kitchen. If it is too cool, the food becomes soggy and soaked with fat. Fats of low smoking temperature will naturally soak into food a little more than fats of high smoking temperature, because the food remains longer in the fat.
         
         
 Buttermilk--   
                   1 cup  sugar                                      
                   2 Tbsp.sour cream         
                   3  eggs                              
                   1/2 tsp.lemon extract                        
                   1 cup buttermilk                    
                   1/2 tsp.baking soda                          
                   1 tsp.baking powder                      
                   1/2 tsp.salt                               
                   1/2 tsp .nutmeg                                  
                   4 1/2 cups flour (more or less)               
          1. Mix sugar with cream and add beaten eggs, lemon extract and buttermilk.
2. Sift remaining dry ingredients with 1 cup of flour and add to first mixture,
            3. Add additional to make a dough just stiff enough to handle.
            4. Roll out and cut. Fry

Cookie Mix

 The best method of having a variety or fresh cookies is to prepare this Basic Cookie Mix
2 cups fat
3 cups sugar
6 cups flour
1 Tbsp. baking powder
Combine dry ingredients; cut in the fat to the consistency of fine meal; store in Zip-Lok bags in the refrigerator. Yield 10 cups
Label; Use as follows
2 cups mix
1 egg
1/4 cup oil
1 tsp. vanilla
Beat the egg, beat in the oil and vanilla; add to the mixture the ingredients for any of the variations of drop cookies except peanut butter which is added to the egg-oil mixture. Combine the two mixtures; finish as DROP COOKIES. Yield 50- 60 cookies.

Variations-All the following variations are Drop Cookies-All use the Basic Cookie Mix

Butterscotch Chip
1 cup butterscotch chips
Toll House (Chocolate Chip)
1 cup chocolate chips
1/2 cup coarsely chopped walnuts
Cereal
1 cup-All Bran, corn flakes, Rice Crispies, and /or puffed wheat
1/3 cup Granola or toasted wheat germ
Chocolate Pecan
4 squares coarsely diced sweet chocolate
1/2 cup pecans
The small bits of chocolate give these cookies an appearance quite different from that of Chocolate Chip.
Coffee
2 tsp. instant coffee
2 Tbsp. orange or lemon zest
Golden Glow -Use white sugar
2/3 cup flaked coconut
1 Tbsp. grated orange rind
1/2 cup grated carrot (pack gently to measure)
French - Use almond flavouring.
1/2 cup finely diced glazed fruit
1/2 cup slivered, blanched or toasted almonds
Shape the dough into a bar and roll; refrigerate; slice thinly to bake
Nut
1/3 cup walnuts, almonds, filberts, or pecans
2/3 cup toasted sesame or sunflower seeds
Spice-Reduce amount of sugar; use:
1/2 cup brown sugar
Add to the egg mixture:
1/2 cup molasses/long sugar
Add to the flour:
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
The spices given above may be replaced by:
1/2 tsp. cinnamon
1/2 tsp. allspice
or the equivalent amount of MY GINGERBREAD SPICE MIX or CAKE SPICE MIX

Hermits-Using my CookMix and Not

2 cups raisins, dates or glazed fruit
1 cup walnuts or pecans
For a variation of Hermits- using mix, soak the fruit for several hours in sherry, rum, or brandy before using.

Or

Hermits-not using mix.
Temperature 375 F           Time: 15 minutes
½ cup shortening                     2 tsps. baking powder
½ cup white sugar           ½ tsp. salt
1 tsp. vanilla                   ½ tsp. cloves
1 egg, well beaten           1 tsp. cinnamon
½ cup nuts, cut                        1 tsp. all spice
1 cup raisins, cut                     ¼ cup sour cream
11/2 cups sifted pastry flour
Method:
1.   Cream together the shortening and the sugar; beat until light.
2.   Add the vanilla and well beaten egg; add the cut nuts and raisins.
3.   Add the sifted dry ingredients alternately with the sour cream; mix well. Chill; drop by spoonfuls about 2 inches apart on a greased or oiled cookie sheet
4.   Bake in moderate oven. Yield: about 48 2-inch cookies.

Gingerbread Spice Mix


1/4 cup ground cinnamon
2 Tbsp. nutmeg
1/4 cup ginger
2 Tbsp. allspice
1 Tbsp. cloves
Combine and stir well; store in air tight plastic bags. Label with the following information:
To every 2 cups flour
Add for Gingerbread 2 Tbsp.
Add for Ginger Cookies 1 tsp.
Sprinkle Gingerbread Spice on baked squash, apple-sauce.

Cake Spice Mix


1/4 cup ground cinnamon
1 1/2 Tbsp. cloves
2 Tbsp. allspice
2 Tbsp. nutmeg
1 tsp. cardamom
Combine and stir well; store in airtight plastic bags; label with the following information.
To every 2 cups flour:
Add for Spice Cake
Oatmeal Cake 2-3 tsp.
Add for Hermits 1-2 tsp.
Add for Fruit Cake 2 Tbsp.
