Corn-Meal Waffles



   1- 1/2 cups boiling water  
  1 cup flour
 1 cup corn meal            
1/2 tsp.baking soda                                                                         
        1 tsp. salt                       
        2 tsp. baking powder                                                                                  
4 Tbsp.shortening          
1/2 cup sweet milk
 2  eggs, separated   
2/3 cup buttermilk about                                                                                                                                                                            
          1 Add boiling water to corn meal and stir in salt and    shortening.
            2. Cook in double boiler 10 minutes, stirring constantly.   
            3. Cool. Add beaten egg yolks.
4. Sift soda and baking powder, and add alternately with sweet milk.
            5. Add enough buttermilk to make a pour batter.
6. Fold in stiffly beaten egg whites. Bake in hot waffle iron. Makes 6.
