O’Brien Potatoes


O’Brien Potatoes

6 medium-sized potatoes         
            Diced pimientos
Salt                                                    
Onion juice
Wash, pare, and cut potatoes into half-inch dice. Dry between towels. Sauté in butter and oil until golden brown. Keep on the move while sautéing to get an even colour. Add minced pimientos and a few drops of onion-juice. They should be tossed frequently during this cooking and not pressed close in the pan.
