Sour Beet Shreds



1 cup shredded
raw beets   
2 Tbsps. water
2 Tbsps. butter
1 Tbsp. vinegar
1 tsp. sugar
            Salt and pepper
Put all ingredients, except salt and pepper, in heavy saucepan. Cover, and cook over medium heat 10 minutes, or until beets are tender but still crisp. Stir twice with fork during cooking. Season. Makes 4 servings.
