Stewed Green
Tomatoes and Peppers
1 onion, sliced
2 green peppers
3 Tbsps. butter
6 large green tomatoes
Salt and pepper
Cook onion in butter in skillet 3 minutes; do not
brown. Wash, and core peppers and tomatoes; cut into eighths lengthwise. Add to
onion. Cover, and cook slowly, stirring often, about 20 minutes, or until
peppers are just tender. Season. Makes 4 servings.
