Boiled Cauliflower



Remove the green leaves from the cauliflower and cut off any bruised or dirty spots. Place it, top downward, in a deep bowl of cold, salted water, and allow it to stay there about half an hour to draw out dust and other impurities. Cook it, whole or broken into flowerets, in boiling water, uncovered. Just before cooking is completed (15-30 minutes) salt the water. Lift out the cauliflower carefully and allow it to drain in a warm place. Pour a medium Veloute or Béchamel sauce over it or send the sauce to the table in a sauce-boat, or serve it with melted butter and paprika
Sometimes hot boiled cauliflower is sprinkled with grated cheese and then with bettered crumbs and baked to a light brown in a moderate oven (400 F), or it may be sprinkled with the grated cheese and served without baking.

Au Gratin Cauliflower



1 medium cauliflower
1 ½ cups medium Veloute or Béchamel sauce
2 hard coddled eggs or
4 Tbsps. grated cheese
            Bread crumbs
Break the cauliflower into flowerets before boiling. Drain. Place a layer of cooked cauliflower in a greased baking dish, then a layer of egg slices or of grated cheese, then a layer of the Veloute or Béchamel sauce. Repeat until all the cauliflower is used. Put a layer of crumbs over the top and bake in a moderate oven (3 50-400 F.) from fifteen to thirty minutes. A bit of cayenne pepper or paprika may be added for additional seasoning.

Cauliflower with Cheese



1 large head cauliflower
½ cup shredded process cheese
2 Tbsps. melted butter
            Paprika
Cook cauliflower in salted water until tender, about 20 minutes. Drain, and put in serving dish. Pour over melted butter; sprinkle with cheese and paprika. Makes 4 to 6 servings.

Cauliflower with Almond Butter



Trim off outer leaves of 1 small cauliflower. Wash and cook in boiling salted water 10 minutes, or until tender. Drain. Cook ¼ cup slivered almonds in 3 Tbsp. butter until slightly browned. Put cauliflower in dish; top with butter and nuts. Serves 4.

Cauliflower Polonaise



 Cook 1 box frozen cauliflower according to package directions. Meanwhile, combine 3 Tbsp. melted butter, 1 tsp. chopped parsley, and 1 diced hard cooked egg. Pour over drained cauliflower. Sprinkle with 2 Tbsps. finely crushed potato chips. Makes 3 servings.
