CHICKEN-SHERRY MUSHROOM


Pre-cooked chicken in a sherry-mushroom sauce on a bed of mashed potatoes.

          1/4 cup       butter or margarine
          1/4 cup       flour
          2 Tbsp.        chicken stock base
          1 1/4 cups   water
          1/2 cup       heavy cream
          1/4 cup       sherry
                             Salt and pepper
1 can          (3 0z.) sliced mushrooms, drained
                             Potatoes
                             Slices or pieces cooked chicken
          3 Tbsp.        Parmesan cheese
                             Paprika
            1. Make a sauce with first 6 ingredients.
            2. Add seasonings and mushrooms.
            3. Prepare mashed potatoes and put in shallow casserole dish.
4. Arrange chicken on potatoes, cover with the sauce. Sprinkle with cheese and paprika and bake in 425 F. oven 20 minutes; or until bubbly. Serves 6.
