Apple Prune Stuffing-for goose or duck



Sauté 1 small onion, finely diced, in 2 tablespoons butter until it is light brown. Combine the onion with 1- ½ cups bread crumbs, 1 cup each of diced celery, diced cooked prunes, and diced tart apples, 1 teaspoon finely minced chives, and ¼ teaspoon salt. Blend the mixture well.
            This quantity is sufficient to stuff a duck: double it for a goose.
