Stuffing, Rice:



This is a very popular stuffing.
1 cup                    milk
1 cup                    soft bread crumbs
1                           onion, diced
1 stalk                  celery, diced
1 Tbsp.                  fat
4 cups                  cold steamed rice
1/2 lb.                  sausage meat
1/2 tsp.                 sage
1 Tbsp.                  parsley, minced
1/2 tsp.                 thyme
1 tsp.                    salt
1/8 tsp.                 pepper
1. Pour milk over crumbs.
2. Sauté onion and celery in fat, then add rice, soaked crumbs, sausage, and seasoning. Makes 6 cups.
