Most of us also tend to think of
lettuce only in the terms of a salad, but lettuce like cucumber can also be
used as a very tasty vegetable.
Wash the plant carefully and pick off
the outer green leaves, leaving only the white part. Boil until tender, drain
well, return it to the kettle, and nearly cover with medium Veloute sauce which
should be made with the original boiling water and well-seasoned.
