1 cut up, frying chicken
2 Tbsps. fat
1 green pepper, diced
1 clove garlic, crushed and diced
1 onion, diced
1 can (19 0zs.) tomatoes
1 tsp. curry powder
1/2 tsp. thyme
Salt and pepper
2 cups cooked rice
1/3 cup raisins
1/3 cup blanched almonds
!. Put chicken in skillet and brown well.
2. Remove chicken to casserole. Add to skillet green pepper, garlic, and onion.
3. Add tomatoes, seasonings, rice, and half the raisins and almonds; simmer 10 to 15 minutes.
4. Pour sauce over chicken, and cook, covered, in 325 F. oven. 50 to 60 minutes.
5. Do not thicken sauce. Serve with remaining raisins and almonds. Serves 4.
