CHICKEN-BUTTER BROILED IN CREAM


          1 frying chicken, quartered
          1/4 cup melted butter or margarine
          2 sprigs parsley, minced
          1 tsp. salt
          1/2 tsp. pepper
          1 cup heavy cream
1. Arrange chicken, skin side down on rack.
2. Brush with mixture of butter and remaining ingredients, except cream.
3. Put in preheated broiler about 4" from heat. Broil 50 to 60 minutes under medium heat, turning 3 or four times, and brushing with butter mixture, every ten minutes.
  4. Put chicken in skillet; add cream. Cover and simmer about 15 minutes.
5. Put chicken in a serving dish and cover with sauce from pan   Serves 4.
