ONION STUFFING


(For an 8- pound bird)
2 cups hot water or preferably good poultry stock
6 cups stale bread crumbs (commercial type will do)
2 eggs, beaten
1 tsp salt
1/2 tsp pepper
1/2 tsp nutmeg
4 tsps sage
2 tsps poultry seasoning
 4 medium-sized onions, diced
1/2 cup bacon dripping
1/2 cup diced celery and tops
1/4 cup minced parsley
1/2 cup raisins (optional)

  • Pour hot water over crumbs; add eggs and seasoning.
  • Sauté the onions in fat until slightly browned, stirring constantly;add celery, parsley and raisins if used. Mix thoroughly with seasoned crumbs. This is a wet- type stuffing.)
