Chicken A L' Afrique
Ingredients
1 frying chicken, cut up
1 large onion, diced
1 fresh or canned tomato, diced
2 cloves garlic crushed and minced.
1 tsp. salt
3 cups water
1 Tbsp. ketchup
3/4 cup chunky-style peanut butter
1/8 tsp. cayenne pepper
3 hard-coddled eggs, sliced
Instructions
1. Combine chicken, onion tomato, garlic salt and 2 cups water. Bring to boil, cover, and simmer 30 minutes.
2. Add ketchup. Blend peanut butter and remaining 1 cup water. Add to chicken mixture.
3. Cover, and simmer 1 hour longer, stirring occasionally.
4. Garnish with cayenne and eggs. Serves 4.
