SWISS STEAK- Do not use commercial minute steaks.






Ingredients:
1/2 cup flour                          
Salt and pepper 
Few slices onion
2 Tbsps. fat
2 lbs steak cut 2 1/2 in. thick from shoulder, rump, or round
1/2    green pepper, fine dice
1 cup boiling water
 1 cup strained tomatoes

Method:
            Season flour with salt and pepper and pound it into the meat with a wooden potato masher or the edge of a heavy meat mallet. Brown the meat in fat. Add onions, green pepper, boiling water and tomatoes. Cover closely. Simmer 2 hours. This benefits if cooked in a casserole in a moderate oven (350 F.) about 1 to 1-1/2 hours. Serves 6
