3 lbs. drumsticks, breasts, or wings
Seasoned flour
Oil
6 Tbsps. milk
6 Tbsps. melted butter
- Coat each piece of turkey thoroughly with seasoned flour. Use salt, pepper, and paprika. Paprika, used generously, helps to produce a golden brown colour.
- Brown meat lightly in 1/2 to 1 inch of hot oil. This takes about 20 minutes. Drain on paper towel.
- Place in a single layer in a shallow roasting pan (NO COVER-you do not want to braise the meat). Combine milk and melted butter. Drizzle half this mixture over turkey and the other half after turkey has cooked 1 hour. Cook in moderately slow oven, 325 deg. F., until turkey is fork tender, 1 1/2 to 2 hours. Turn once to crisp and brown evenly. Serves 6.
