Orange Mandarin Duck


This recipe is not Peeking Duck
ORANGE DRESSING
1/2 cup hot water
3 cups bread crumbs, toasted
2 tsp. grated orange zest
2/3 cup diced orange pulp
2 cups diced celery
1/4 cup melted butter
1 egg, beaten
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. savoury
1/2 cup raisins

  • Pour hot water over bread crumbs in large bowl, and let stand 10 minutes. Add remaining ingredients and stir lightly to combine. Stuff duckling
  • Note if you prefer dry stuffing omit hot water.  
ORANGE OR MANDARIN SAUCE
2cups sliced oranges or 2 (11 oz cans mandarin oranges
1/2 cup white wine or apple juice
1/2 cup melted butter
2 Tbsps. Soy sauce (omit if preparing A L' Orange
1 (8 oz) can ) tomato sauce
1 crushed and minced clove garlic
1/2 tsp. ginger


  • Combine all ingredients and heat to the boiling point, stirring occasionally. Serve hot with duckling.
