Chicken, Broiled




          1. Cut small chicken into half and remove backbone and breast bone. Break hip, knee and   wing joints.
            2. Brush both sides with melted fat, place on heated rack, skin side down and sprinkle with salt.
            3. Place rack about 5 inches from heat.
            4.  Cook with moderate heat (350 F.) from 45 to 50 minutes,until chicken is tender and browned on both sides, turning once.
          Variation
            Chicken, Broiled with Barbecue Sauce    
1 frying chicken, quartered
          1/2 tsp. dry mustard
          1 tsp. Worcestershire
          3/4 tsp. salt
          1/8 tsp. pepper
                   Dash cayenne
          1-1/2 Tbsp. vinegar
          1/4 cup melted butter or margarine
            1. Put chicken, skin side down, on greased rack of broiler pan or barbecue
            2. Combine all other ingredients to make sauce; brush chicken with sauce.
            3. Put about 4 inches from heat. Broil 30 minutes, basting several times with more of the sauce.
4. Turn chicken, and broil 15 minutes longer, basting with sauce. Serves 4.
