Braised, Broiled Spareribs Au Gratin


Roast Spareribs Au Gratin
Ingredients
2 pounds of spareribs             Salt and pepper

Method:
          Place spareribs in a shallow baking pan and sprinkle with salt and pepper. Roast in a moderate oven (350 F.) allowing 40 to 45 minutes per pound. Allow 1 pound per serving.
            Cover spareribs with greased paper and bake for 3/4 hour, then bake, uncovered, for remaining time. Just before taking meat from oven, sprinkle with 1 cup bread crumbs seasoned with 1/4 tsp. of sage and minced onion. Baste with drippings in pan and return to oven 5 minutes longer.

Method:
            Place spareribs in a casserole or baking dish and brown in very hot oven (450 F.) Season with salt and pepper, add 1/2 cup water, cover casserole, and return to oven. Reduce temperature to slow (325 F.) and continue cooking until tender, about 50 minutes longer. If desired, place cored apples around the ribs. Fill centers of apples with brown sugar and nut meats or raisins.
Variations:
Stuffed-Use 2 matching sections of spareribsSew the edges together, except at 1 end. Fill with Bread, Celery or apple stuffing, and sew or skewer the edges together. Bake in slow oven (325 F.) for 1-1/2 hours.
With Barbecue Sauce-Brown ribs, in casserole, or under broiler, pour off any grease. Pour one of my barbeque sauces over ribs, (or use recipe given for pork chops), cover casserole and bake.
With Sauerkraut- Brown ribs. Place sauerkraut in a greased casserole. Sprinkle with brown sugar. Add 1/2 cup water and arrange spareribs on top. Cover casserole and cook in a moderate oven (350 F.) for 1 hour.
