Boiled Pigs-feet
6 pigs-feet 1-1/2 Tbsps. salt
Scrape feet, wash thoroughly, and tie each separately in a piece of cheesecloth. Cover with boiling water and add salt. Heat to boiling, reduce heat, and simmer 6 hours. Cool in the water. When cold drain, but do not remove cloth. Chill. Use for broiling, frying or pickling Serves 6
Broiled- Split feet, dredge with salt, pepper, and flour and broil for 10 minutes. Season with butter, salt, and pepper.
