Beer Batter Chicken




2/3 cup all-purpose flour
1 tsp salt
½ tsp. baking powder
1/3 cup beer
1 egg
          Salad oil
1- 3lb. broiler-fryer, cut up
1.    In bowl with fork, mix first 3 ingredients. In another bowl, beat together beer, egg, and 2 tsps. salad oil; stir liquid into flour mixture.
2.    Coat half of the chicken pieces with batter.
3.    Meanwhile, heat, in 12-in. skillet over medium heat1/2 in. of salad oil to 370 F.
4.   Fry chicken pieces until browned and tender, about 20 minutes, turning once. Drain. Repeat with remaining chicken.
