Grades of Beef


Prime is the highest grade of beef (do not confuse with prime rib; which must be the grade and the correct cut). It is produced in smaller quantities than the other grades and goes almost exclusively to foreign owned restaurants and hotels, or for export. Canada AAA also goes almost exclusively for export.

Canada AAA may be found in some larger Canadian owned hotels and restaurants or in supermarkets at a premium price and usually under a "gourmet" name. Canada AA is the grade most found in Canadian supermarkets.

A is a step lower, mostly older, heavy, or cow beef and makes up the bulk of the supermarket selection in Canada. This is what you get from those buy one get one free sales.

Bright red colour is no indication of freshness, tenderness, or quality of the meat you are about to buy and gives only some slight indication of the fat content. (See explanation under Focus on Ground Beef).
