FRIED TURKEY BREASTS-TURKEY FINGERS



3 boned turkey breasts
1/4 cup flour
2 Tbsps. lemon juice
1/4 c up olive oil
1/2 tsp salt
1/4 tsp pepper
1/2 cup freshly grated Parmesan cheese
1/4 cup butter or margarine

  • Cut turkey breasts into 1/4 inch thick slices.
  • Roll lightly in flour
  • Beat together lemon juice, olive oil salt , and pepper.
  • Pour over slices and marinate 1 hour.
  •  Drain thoroughly. Roll in cheese and sauté  in butter until tender and lightly browned.  Makes approximately 4-6 servings.
