-Coffee gives this an elusive and tantalizing flavour.
Ingredients:
2 lbs beef for braising
6 carrots, peeled and diced
1 cup each tomatoes, water, and strong black coffee
2 cups diced potato
Salt and pepper
1 box frozen peas
1 onion, diced
Method:
Brown meat on all sides in heavy kettle or metal casserole, adding a small amount of fat if necessary. Add tomatoes, liquids, salt, and pepper. Bring to boil; cover and simmer or put in oven 1 hour. Add potato, and continue cooking until vegetables are tender. Add peas; and cook a few minutes. If desired, thicken gravy with roux. Makes 6 servings.
