Stuffing, Rice-Wild:



Another very good, very popular, stuffing.
3 cups                   wild rice
1 tsp.                    salt
3 quarts              boiling water
1/4 lb.                  sausage meat
1/4 cup                 butter
1 cup                    mushrooms, sliced
1/3 cup                 onion, diced
2 stalks                celery, finely diced

1. Stir rice into boiling water; add salt and cook very slowly until tender, about 40 minutes.
2. Fry sausage meat until lightly browned,
3. Add butter, sauté mushrooms, onions and celery in butter for 5 minutes or until lightly browned.
4. Combine with rice, mixing lightly. This makes 5 cups of light stuffing. Enough for 1 (10 lbs.) goose.
