Ginger Beef-Tomatoes and beef broth provide the liquid necessary for braising.
Ingredients:
4 lbs. Beef suitable for braising
2 cloves garlic, minced
1 tsp. turmeric
1 cup canned tomatoes
2 tsp. ginger
1 cup stock or bouillon
1 tsp. salt
2 dried red peppers crushed
2 Tbsp. fat
2 onions, diced
Method:
Rub meat with next 3 dry ingredients. Brown on all sides in fat in heavy kettle. Put meat on rack in kettle. Add remaining ingredients, cover, and simmer 3- 1/2 hours. Serves 6.
